Our beef is harvested when both the animals and the grass are ready. We time it so that the meat is packed when the nutrients and taste are at their peak. The beef is processed by our government-inspected local butcher. It is dry-aged for 14+ days and then the choicest cuts are wrapped and frozen.
We specialize in a yearly offering of our healthy and economical halves and split-halves, available every late fall by pre-order. For those with less freezer space we offer our special packages from 50 lbs and up. We also offer, when available, our extra lean ground beef and super-trimmed stewing beef, in 1 and 2 lb packages. Take a look at our price list, we are always happy to customize an order to meet most of your needs. If you don't see it on our list, feel free to ask.
If you have room in your freezer, you can purchase a half of beef, or a split-half (quarter), which is an economical way to get the delicious beef your family enjoys. A half of beef is usually around 275 lbs in hanging weight.
After our butcher is sure that the beef has been dry-aged long enough to ensure the meat is as tender and tasty as possible, he will trim your half, removing the bone scraps and trimmings. Of the meat that is left, approximately 1/3 will be steaks and the remaining 2/3 will be roasts or hamburger and stewing meat. You may also give specific directions to the butcher before he cuts your half, specifying what you like more or less of.
When you come to pick up your order, all your roasts, steaks, and hamburger will be carefully wrapped in butcher paper and boxed up ready for your freezer.
